Saturday 2nd January 2016: 11.18pm. Location: Dromahane.

This is the second driest sherry of this year's Christmas booze, a Palo Cortado. Not quite as dry as the Oloroso, it has a similar though lesser complexity and deep brown color, and isn't astringent. The one below was quite affordable compared to the Oloroso, and I'd choose it preferentially personally over the Oloroso but not over the Sercial I spoke about a week or so ago whose weird not dry not sweet vinegary-but-tasty profile has grown on me.
